After many years in the corporate world, founder Barry Bayat embarked on a journey to find the quintessential cuvée, conducting countless winery tours, vineyard visits, and tastings. This process led him to the village of Flassans-sur-Issole, in the heart of the Var hills.    Straw yellow color with greenish reflections, clean and bright.    Fresh, complex, and elegant nose. Fruity character (peach skin and golden apple) and citrus touches (lime), with aromas of bay leaf, aromatic herbs, white flowers, and saltiness. Fresh entry, good balance. Highlights citrus notes and crunchy stone fruit, along with elegant vegetal notes and a saline background.    Delicious with fish, pork, poultry, seafood, and cheese.    Flassans-sur-Issole, Côtes de Provence.     France.
